Drew Beldsoe, a NFL quarterback said this, and most probably referred to the plays in a football game. By attempting different plays during the course of a game, players try to construct a winning game.
Similarly we apply this to the wine making process. There are different techniques (plays) that can be applied to the process at different times through the process.
First off you decide what type of game you want to play - what type of wine you want to make.
Then you choose which players you need to have on your team to accomplish this task - the apparatus that you need to complete the task to produce the final product.
The next step is to decide which individual plays are mandatory, like throwing the ball, punting, receiving - these reflect the different steps in preparing and making the wines - picking the grapes, stomping them, treating, aging and then finally bottling and corking. Although, here you could add, if you want, the marketing as well
Within each of the plays there are finer details on how the ball is distributed - what type of natural chemicals to use to catalyse the process.
